Sweet & Spicy Garlic Edamame: The 10-Minute Snack That Gets Even Better Tomorrow
Okay, but why is edamame this good?! 😂
Meet your new “I just need something snacky” snack: Sweet & Spicy Garlic Edamame. It’s sweet. It’s salty. It’s garlicky. It has a little kick. And, very importantly if you’re anything like me, we’re making it extra saucy. Nobody wants the edamame at the bottom of the container fighting for its life with zero flavor! And if you’re saving some for tomorrow? Even better. Let the amazing edamame hang out in all that sweet, spicy, garlicky goodness overnight.
The sauce is the star!
The whole thing takes about 10 minutes, but the sauce tastes like we put considerably more effort into it. Coconut aminos, honey, coconut sugar, fresh garlic, rice vinegar, toasted sesame oil, red pepper flakes, black pepper, and toasted sesame seeds come together for this sweet-savory-tangy situation that coats every little piece of edamame. And, because we deliberately make plenty of sauce, the leftovers keep soaking it up in the fridge.
Tomorrow-you is going to be very pleased with today-you!
Sweet & Spicy Garlic Edamame
Ingredients
1 (12–16 oz) bag frozen shelled edamame
1/3 cup coconut aminos
1½ tablespoons honey
1 tablespoon coconut sugar
3–4 cloves garlic, finely minced
1–2 teaspoons rice vinegar
½ teaspoon toasted sesame oil
½–¾ teaspoon red pepper flakes
¼ teaspoon black pepper
2 teaspoons toasted sesame seeds
Salt to taste, if needed
Let's make it!
Prepare the edamame according to the package directions until heated through and tender. Drain well and set aside.
Add the coconut aminos, honey, coconut sugar, garlic, and red pepper flakes to a small saucepan or skillet. Heat over medium-low for 1–2 minutes, stirring frequently, until the coconut sugar dissolves and the garlic begins to soften. Don't reduce the sauce too much—we want all that extra sauciness for later!
Remove from the heat and stir in the rice vinegar, toasted sesame oil, and black pepper.
Add the warm edamame and toss until everything is thoroughly coated. Stir in the toasted sesame seeds, give it a taste, and add salt or additional red pepper flakes if you'd like.
Eat it warm, let it come to room temperature, or pop it in the fridge and let that sauce keep doing its thing.
Make it yours!
This is also a great recipe for experimenting instead of worrying about making it exactly the "right" way.
Want it sweeter? Add another ½ tablespoon of honey or a little extra coconut sugar.
Spicier? Increase those red pepper flakes.
Want more tang? Add another teaspoon of rice vinegar.
Team extra garlic? Same. Add another clove or two!
You can also finish it with extra toasted sesame seeds, a little more sesame oil, chopped green onions, fresh ginger, or a squeeze of lime.
Taste. Adjust. Experiment. Make your taste buds happy!
A little mind-body goodness, too.
There's some nourishment tucked into all that deliciousness, too. Edamame provides plant-based protein, fiber, and a variety of nutrients that can help make a snack satisfying and provide your body with energy. But around here, we're not interested in pretending the nutritional benefits are the only reason food deserves a place at the table. Sometimes food can nourish us AND taste really freaking good. This does both!
Serve it as a snack, add it to a grain or Buddha bowl, toss it onto a salad, tuck it into lettuce wraps, or do what I do and repeatedly open the refrigerator for "just one more bite." You know how that goes. 😂
Sweet. Spicy. Garlicky. Extra saucy.
Ten minutes today, and a ridiculously good snack waiting for you tomorrow!
