Homemade Oat & Walnut Protein Pancakes
Okay, these pancakes have been in my kitchen rotation for years, and I’m finally sharing them with you! Meet my Homemade Oat & Walnut Protein Pancakes: hearty, cozy, ridiculously easy, super yummy, and made with the kind of ingredients you might already have hanging around your kitchen.
The base is a simple blend of oats, cottage cheese, eggs, and milk with a little pure maple syrup and vanilla. Then comes my favorite part: pumpkin pie spice and chopped walnuts. And yes, pumpkin pie spice absolutely lives in my pantry all 12 months of the year. I refuse to believe it has a season. 😂
The Kind of Breakfast I Keep Coming Back To
One of the reasons I’ve made these for so long is that there really isn’t much fuss involved. Everything except the walnuts gets tossed into the blender, blended until smooth, and then the walnuts get stirred in.
Let the batter hang out for a few minutes to thicken, and it’s ready for the skillet.
That’s it.
They’re warm and hearty, with a little crunch from the walnuts and plenty of cozy spice. They also happen to be one of those breakfasts that feels substantial without requiring you to spend your entire morning in the kitchen—which is always a win around here.
Make Them Your Own
These are very much a raid-the-fridge-and-see-what-sounds-good kind of pancake. Add fresh berries. Toss on a few extra walnuts. Drizzle them with maple syrup. Add a spoonful of nut butter. Sprinkle on more cinnamon or pumpkin pie spice. Add sliced banana. Grab whatever looks good and go for it.
There really aren’t many rules here, and that might be my favorite kind of recipe!
Make Extra…Future You Will Be Glad You Did
These pancakes also reheat beautifully, which is why I almost always recommend making more than you need. Keep the extras in the fridge for an easy breakfast later in the week or freeze a batch to pull out on mornings when cooking from scratch is absolutely not happening. They’ve been one of my favorite meal-prep staples for years for exactly that reason: something homemade is already waiting for you.
